Is Port Triggering much different than having UPNP on a router? Doesn't
UPNP also automatically open up ports?

I read that port triggering is necessary if you have more than one person in
the same house that wants to play the same online game.

UPnP only works if the app supports UPnP.
If your app doesn't support UPnP, you'll have to open the ports manually.

Port Triggering is used in this circumstance.
You (or a program you use) initiate a connection to the internet on port a,
but you (or a program you use) expects a response from port b.
