If it's a real big sites, I suggest you buy a book about WLAN.
Basically it comes down to this for best results:
- Install all Access Points with a wired backbone
- Use Access Points from the same vendor (or even the same type)
- Use 3 channels as far apart from each other as possible to make a bee grid
structure and overlap the cells (mind your country's limitations!)

Some access points can do neat stuff like load balancing and switching to
repeater mode when the backbone connectivity is lost. Have a look look at
the possibilities of the Access Points you buy!
