I realize that this is how VPN is supposed to work, but when I VPN into the
office using Windows, I can no longer get to my home linux machine, on a local
network in my home.

Is there a way to allow my linux machine to be available, without jepoardizing
my employment?

This is a Windows problem, not Linux. Windows is disabling access to your
local network. However, you may want to check your routes, befor and after
starting the VPN.

Just uncheck the "use default gateway on remote network" in the advance
TCP/IP setting...

There are many different VPN implementations. The phenomenon is coming from
the VPN handler in Windows.

In many commercial VPN clients, it is intentional to kill all other network
traffic for the duration of the VPN connection. This is done to prevent
sneak paths around the office firewall to the office internal network from
the Internet. In this regard, your Linux computer is part ov the evil
external world.
