Is there a cli I can use to connect, say via ssh, to my servers and find
what software version is running for various installed packages.

It depends on which distro you're using. If, for example, it's RedHat
with no software installed in /usr/local sub-tree (i.e., everything
from RPMs), then "rpm -qa --last" will show you all the packages with
installation dates, and version numbers.
