Various gateways for routing traffic

I would like to know what other people use for their IP gateways.
Currently I use a Watchguard firewall as the default gateway for our
organization.
We have about 100 pc's throughout 8 locations, 10 servers, and a host of
other attached devices. We host internal web, mail, ftp servers.
I don't know if I'm using my existing equipment efficiently or if I should
change the configuration.
I would like opinions on using other equipment, specifically a server
(Server 2003) to act as the default gateway and then have the firewall as a
backup gateway.
Any input would be greatly appreciated.

It's my belief that a router should always be the default gateway. By
router, I mean a real router, not a Server. There are too many variables and
inconsistencies using a server. You probably don't need a router unless you
have multiple LAN segments on your local network. I've never had much luck
with Watchguard products, but if it's routing OK for you now, just stick
with it.
