By just an access point, do you mean "No wired connections" or "no
router"?
Either way, yes you can.
If you don't want to use it as a router, just disconnect the WAN
interface, and consider setting a static IP address on the WAN
interface.
If you simply don't want any wired connections, you can do that too. MAC
filtering and encryption normally only applies to wireless connections
anyways, so you can still (and should still) use both to secure your
wireless communication.
Accessing the configuration interface should still be possible over the
wireless connection, however it's normally not recommended to make
changes to configuration over a wireless connection...
