I'm trying to configure routing & remote access to direct traffic to
different gateways depending on the destination.

On the RRAS server I've created a default static route (destination 0.0.0.0,
mask 0.0.0.0, gateway 192.168.2.3, metric=1) and a static route (destination
192.168.180.0, mask 255.255.255.0, gateway 192.168.2.1, metric=2).

I set the default gateway on a client to the address of the RRAS server.

It seems that when I save the configuration, it works for a little while and
then stops working. Am I doing this correctly? Any hints would be
appreciated.

You should set the metric of the 192.168.180.0 route to 1 as well. The
server will use the longest match to determine where to route packets.
