If I have a wireless router connected to my cable modem, is it possible to
use the MN-700 as an Access point, but have it connect to my other router
over wireless?

No, the MN-700 in access mode needs to be wired to the router. It cannot do
two-way communication with the router AND wireless clients. If you can wire
it, then it can serve a segmented section of your LAN.

I don't know what your "wireless DSL modem" is, JP, but if it has Ethernet
ports, then you've got a modem/router/base station in that unit. The MN-700
could then be set up as an access point (wired to the DSL modem) and serve
the Xbox which has a wireless adapter connected. Something like this:

Broadband connection --> DSL modem
DSL modem wired --> MN-700 (as access point)
Xbox wireless adapter --> MN-700 access point

The MN-700 cannot wireless establish a connection to your DSL modem. It
must be connected via Ethernet cable.
