Can you have two wireless access points in one network. At one end of my
house the signal is too weak. If I ran a cable to the far end and then put
another access point on it would that work?

yes. Give the same SSID and you should be able to roam between them.
Pick non-overlapping channels like 6 and 11 or 1 and 6

you should also consider the AP position and antenna orientation, as
you should be able to cover a house from one AP with ease unless you
live in a stately home or something with lead walls.

With some AP like the Belkin I have they can be configured to work together as a bridge.
From the web admin page "Wireless Bridging or Wireless Distribution System (WDS) is used to connect Wireless Routers and Access points together to extend a network. "

Agree with Phil though that you can probably move the AP to a different location and achieve much improved range. Raise the AP to the highest point possible and remember that it is line-of-sight for the radio from AP to the clients. Sometimes moving the AP a short distance can avoid mettalic objects that are in the line-of-sight and this can improve things a lot.

I installed VNC server on the remote client (that couldn't be moved) and then watched the received signal strength from a PC near the AP using a VNC client as I moved the AP around to get the best signal.
