I need a tool which will show (numerically) B/s inbound/outbound on eth0
(preferably by port), and one which will show how quickly a given file is
being read/written. Do such tools exist?

I have gkrellm. If I click on the network bandwidth graph, a number appears
in its corner. What are its units? I suspect it's "bytes/second", but it
might be "bytes/sample" or "blocks/{second,sample}" for all I know.

Try getting a copy of Ethereal and check out some of the analysis and
statistics features that it supports such TCPTRACE amd others.......

Yes, ethereal would be fine for you. Well, you might try libpcap
(http://sourceforge.net/projects/libpcap/) should you want to make
your own customized capturing tool.

If you are lazy like me ... just want to see the graph as png graphics
.... mrtg would be fine. Try that at
http://people.ee.ethz.ch/~oetiker/webtools/mrtg/.

For a simple display of traffic without fuss try: iptraf

Or, if you want to keep track of multiple connections, "iftop"
