Switch on Small Network

I have a small network of about 40 computers including 5 servers. They are
all on one Intel 10/100 Switch. I would like to take the servers off of
this switch and put them on a GIGABIT switch and then just chain it to the
existing Intel 10/100 switch.

Is there any other configuration I need to do?

I assume that the switch is "smart".

My goal is to have GIGABIT traffic between servers only - for now. (Servers
are all Windows 2003 - 1 Exchange 2003, 1 File Server/Backup Server, and 2
DCs) - they will still be on a 192.168.5.x/24 mask.

Yes. That's all you need to do.
Certainly you have to ensure all your servers have gigabit NICs
