I have a Class C network environment and need assistance on routing and
subnetting. Currently my locak network address is 192.168.0.x and a remote
office connecting through a router with address of 192.168.1.x. The problem
I'm having now is that my local LAN is running out off IP addresses and what
will be my best solution? Should I reconfigure my address scheme to Class B?
or should I add another router to split up my local lan?

I originally thought with class C with subnet mask of 255.255.255.0, this
method could not route correctly if I want to keep all my 254 host on one
segmet? or its safe to add routers and add more ip subnets 192.168.2.x,
192.168.3.x, etc..

A subnet mask of 255.255.255.0 gives you a maximum of 254 hosts (in your
case from 192.168.0.1 to 192.168.0.254). I would recommend using a second
subnet rather than renumbering your network. You don't really want more than
254 hosts in a subnet.

If you do add a second subnet you will probably need to modify the
routing at your
remote site (if the machines in the remote site need to "see" the machines
in the second subnet). It will need to send traffic for both these subnets
across the link to the main office.

Adding a second subnet is pretty straight-forward and you will find
plenty of examples (including in this newsgroup).
