Spamassassin deleting my mail

I have just installed SpamAssassin and everything seemed to be going well,
however I have just found that if a message has a higher spam level than my
required_hits then it just gets deleted.
I have specified:
rewrite_subject 1
In the user_prefs of my $HOME_DIR/.spamassassin but it still deletes the
mail. How can I get it to keep forwarding the mail but to add a tag like
{SPAM} to the subject?
