i wonder what the advantage is of having a proxy server instead of just
internet sharing.

Proxies potentially give you more control/security, but they're not
transparent. A caching proxy may be quicker depending on whether the
cache actually gets used effectively. NAT is mostly tranparent so
doesn't require applications to be proxy-aware, but may need a little
tweaking to work with things like active FTP sessions.
