Serious file permissions help

Hello,

I am really in need of some guidence here please?
I cannot get the permissions correct on my file server.
I am a little new to this so bear with me.

How do I keep someone from taking a file out of a shared
folder but be able to access it? I have program folders
within this share and I do not want them to get the
complete program just install it by clicking on the exe
file and ..... install
There are so many options and users and groups I am
turning myself around.

Use advanced permissions to remove the list folder/read data permission.

Use advanced permissions to remove the list folder/read
data permission.
Would this be on the share folder itself or the program
folders inside the share?
