Is there a particular satellite service available which will let say for
instance your laptop stay connected to the Internet even if your driving
around on the Interstate? I would like to be more mobile and not be
tethered to my office. Just looking for any real-world practices from any
of you consultant types out there.

This is kind of off-topic, but it sounds like you want something
provided by the wireless companies. Check out the Verizon EVDO or
Cingular EDGE services. You basically buy a PC Card for your notebook
and pay $80/month for unlimited data access. Works great wherever they
have coverage, which is pretty good.

What Interstate highways do you use?
I think I'll just stay on the back roads.

VZW has got the price down to $59/mo now. No too bad, but still a little
pricey for me. Good speed though (~400-800kbps). It won't be long before
this is affordable and commonplace. Kinda like microwaves :-) LOL.

trucker!)

There is a company called MotoSat, but you CAN NOT use it for internet
while moving, internet requires two way traffic and that is quit a
no-no when you are sending and receiving, at least the FCC says so.

As they said, Verizon or Sprint would be your best bet, with speeds
between 400k-1.7mb it will be your best bet, not all areas have the
high speed coverage, but I have found that the Sprint coverage at least
in all the southern US will net you at least a 70k connection in most
places in non broadband enabled areas.
