I'm using an S55 (Siemens) with a normal wired handsfree. When I plug
it in detects the "handsfree" profile fine. My question is: can the
profile be set up to answer automatically as I used to with my
8210.....

TIA

Yes, go Menu -> Setup -> Accessories -> Car Kit -> Auto Answer.

I'm quick me!
For future refernce to anyone;
Just noticed I pointed you to car kit, you may have meant personal
handsfree, although I'm sure you've worked out that it's next to Car
Kit in the menu with Auto Answer in the options.
