Can you get?

1. Socket-Socket for making two RJ45-RJ45 cables into one long one
2. Devices to convert a straight wire into a twisted one

I should know this really shouldn't I

Yes, Screwfix (amongst others) sell them.

Yes - it's called an RJ45 coupler

Yes - it's usually just a short plug-to-socket crossover cable.
