Currently my two network interfaces come up as Local Area Connection 2
and Local Area Connection 3.

I've tried removing and re-installing but they still refuse to come up
as 1 and 2. I'm assuming something needs to be reset before 1 is used?

Format the disk and re-install the server OS. This will take like, what,
20 minutes? That is way easier to teach you how to use the device manager
in W2K, which, depending on your skills, will take at least a full hour.

In the device manager set it to show hidden devices under the view menu and
delete the network adapters, LAN1 should be showing (I think)

Set device manager to show hidden devices.

http://support.microsoft.com/kb/241257

Delete all the Network adapters. Reboot and it should find the existing
devices and label them appropriately.
