I have 2 Windows 2003 Servers, in different locations. I RDP into Server
#1. From that RDP session I want to make a VPN connection to Server #2. As
soon as the VPN connection is established, my RDP session to Server #1 gets
cut off. Any ideas as to why?

For security reason, the VPN change the routing table. If you do want to use
RDC and VPN both in the same time, you may want to uncheck use gateway in
remote network. This search result may help.

Can you be a bit more specific please as to where this setting is? I do not
see any check box which says "Use default gateway on Remote Network" on the
properties for the VPN connection. Thanks.

In your VPN connection window, click on properties->network tab->tcp/ip
properties->advanced->general tab
