If someone tries to log in to a proftpd server using anonymous on a
server without anonymous access, is there any way to record what those
people are using as passwords?

Sure. Keep your logs.

(the whole interchange is logged if you turn on sufficient logging in
your ftpd, so it's up to you).

What do you mean by "any way"? Don't you mean "what is the usal way"?
Or "what is one of the more convenient ways .."? You can do anything
that's computationally feasible on a computer, wo why do you ask "any
way"?
