I'd just like to confirm that if ethernet (cat5) cable is being used to
power an AP we can also use the same cable to do stuff like upgrade firmware
on the AP.

Power over the ethernet cable has no impact on a firmware upgrade or
anything else really .... as long as there is no physical/operational
problem with the POE implementation.

All POE (power over ethernet) does is use normally un-used wires in the
ethernet cable to carry power.

A CAT5 cable has 4 pairs of wires ... and ethernet uses two (transmit
and receive). This leaves two pairs doing nothing and some people use
them to carry power or other things (I have one run where I use the last
pair to carry an analog telephone line) ...

Shouldn't be a problem... Configuration changes can be made with the
Management Tool or with any webbrowser...

If you are using CAT5 in this config:

orange/white
orange
green/white
blue
blue/white
green
brown/white
brown

which are the unused pairs?

Only pairs 2 and 3 are used... (the green pair and the orange pair).

orange/white - Pin 1
orange - Pin 2
green/white - Pin 3
green - Pin 6

Pins 1 through 3 and 6 are used for ethernet communication...

blue - Pin 4
blue/white - Pin 5
brown/white - Pin 7
brown - Pin 8

Pins 4, 5, 7 & 8 are the spares, that are normally grounded in 10base100
communications... Double up 4/5 and 7/8 so that you'll have less voltage
drop (wire resistance) from the wall-wart...

I dunno what the point of sending dialtone up on 7/8, would be for in this
situation...

A quick google search turned this up

Input Jack Output Jack DC Plug
Pin 1 <-> Pin 1
Pin 2 <-> Pin 2
Pin 3 <-> Pin 3
Pin 4 <-> DC Positive Wire 1
Pin 5 <-> DC Positive Wire 2
Pin 6 <-> Pin 6
Pin 7 <-> DC Negative Wire 1
Pin 8 <-> DC Negative Wire 2

it looks like pins 4,5, 7 and 8 are the unused pairs.
this website tells you how to build the PoE
