There are a lot of options, depending on exactly what improvement you

Even if you don't have a router all of the machines should already have
AV and personal firewalls. Your current system uses a PC as a router,
replacing that with a dedicated hardware device doesn't change anything.

It can do several things, some of them that are probably not useful to
you. It's worth remembering that "server" is a function and not
necessarily a device. You can turn one or all of your existing machines
into servers and still use them as workstations.
A file-server is a machine that stores files and makes them available to
other machines on the network. If you need to access the same file from
each machine then this will do it. If you create a network share on a PC
then it becomes a file-server, even if you use it for other things too.
A proxy-server allows machines on the network to run programs that
communicate with the Internet. You already have a proxy-server.
An authentication server keeps a central record of login names and
passwords. Whenever you try to login on any machine your login ID and
password are passed to the central server which tells the local machine
what access rights you should have. Is this what you need?
