I think Exchange Server is overkill for what you describe. Sounds like you
want Instant Messaging. Check out Jabber (open source) for one option that
integrates with AD - you could use Pidgin as the client (also open source).
I believe this supports offline messages.

really suitable for the small purpose you describe, and is complex to
install and manage.
Microsoft Small Business Server is something you might look into, however -

and is designed for easy setup and management, which is helpful if you
aren't familiar with Exchange, etc.
