I've been tinkering with the idea of setting up one computer on our home
network - I've noticed 'freeNAS' and 'openfile' distros - question comes
to mind: do I really need anything like that or will any old distro with
nfs suffice?

Any o/s that includes resource sharing will work. Dedicated distros like
freenas are pared down and optimized to just what is needed to do the job.
Freenas includes a slick browser interface that allows admin over the wire,
so you can hide the nas box in a closet.

I installed freenas in an old clunker and was pleased with how it worked.
Give it a try.
