Is it possible to have 2 domains running off one server, or do you need to
have 2 domain controllers set up with trusts?

Each domain must have a domain controller. One machine
cannot act as the DC for 2 different domains. You would
need to have 2 seperate machines, each a DC for each
individual domain and create a trust between the two.
