I have a server that has two NICs.... a nice 1Gb and a seperate 10/100
for fault tolerance.

The server is DC, GC, DHCP & DNS but not any of the FSMOs, and does not
have WINS.

The NICs are connected to seperate switches for fault-tolerance, but
how should I configure them so that the 10/100 automatically takes over
servicing clients in the unlikely event of the 1GB becoming unavailable.

Look into "Network Adapter Teaming" solutions offered by Intel (and HP,
maybe some others). To do this they need to be on the same switch.

Short of doing Nic Teaming with special Nics,...it just flat-out doesn't
work like that. You do not have any kind of fault tolerance at all or any
kind with what you have there,...and you won't,...it just doesn't work that
way.
