In what circumstances would shielded Cat5 cable be used as opposed to
un-shieded cable in a network installation??

Shielded from what exactly? Heat, Radiation, signal loss/quality ???

From another message you appear to be a professional network installer - and
you have
never heard of shielded cable!!!!! Try a basic text book on electronics!

It's intended for use in high electrical noise environments, it has to
be used with shielded fittings - if the screen isn't connected properly
it can end up acting as a large antenna for electromagnetic
"interference".
