I want to connect a computer to a hub and monitor the amount of traffic
flowing across it. I would like to break it down by IP address and
possibly even by port. Anyone have any suggestions on what software I
could use?

I use wireshark. It used to be called ethereal. Or, for command-line
stuff tcpdump works OK. Both are somewhat complicated to use, but you
can filter on anything.
