How to know which of multiple network interfaces is being used by the traffic?

I am running Windows Server 2003.
I need to know which of my multiple network interfaces is being used as the
path for my network traffic. How to do it?

It uses the one the Routing Table tells it to use based on what the
destination is.

Indeed. It depends entirely on where the traffic is going. If it is being
delivered directly (ie "on the wire", not through a router) it must use the
NIC which is in the same IP subnet as the target machine. If it needs to be
routed, it must use the NIC which is in the same IP subnet as the router.
