Linux Firewalls by Robert Zeigler.

This book was written while IPtables was still fairly new so some of the
syntax in the example scripts is incorrect for recent versions of IPtables.
The book overall however will give you a good idea on the vast majority of
functionality found in IPtables and give you a great foundation for
creating your own personalized, optimized firewall scripts.

Personally, I would use a GUI to create the firewall script for you.
You can then examine the code it produces, and learn that way.

The GUI of your choice. Personally I use the one that comes with
webmin, simply because it means I have most of my administration tools
in one place.
