Maybe the old IT guy did not want to spy on the employees.
Anyway there are devices that will log each users internet activity. If that
is not installed, and not knowing your network config, you can look at the
temp internet folders of each user.
You can also look at the cookies on each desktop, the name associated with
the cookie tends to indicate what kind of site it is.
That can be a long a drawn out process.
If the Boss really wants to check to see what people do during the day,
reccomend he get one of the devices

Ask you boss to send out a memo and that no more business unrelated surfing
will be allowed and that we are now monitoring your surfing on the web, or
something like that. That should cover him from a legal standpoint.
