IAS/RADIUS Remote access policy

Hi all,
In my network lab I'd like to deploy and test the following RRAS servers
(all servers are based on Windows server2003 and members of a single AD)

IAS1 = It's the IAS/RADIUS (Radius server)
VPN1= It's RRAS server for VPN connections (Radius client)
VPN2= It's RRAS server for Wi-fi connection (Radius client)

Once configured VPN1 and VPN2 to use Radius for Authentication and
Accounting, I created 2 remote access policies on the Radius server (IAS1)
one for Vpn connections and the other for Wi-fi connections, but I'm little
bit puzzzled about the rest of this configuration.

1)In order to match the remote access policy Authentication protocols and
Encryption, do I have to set them on:
- the Radius clients
- or Radius Server

2) As for the default remote access policies of the Radius-client:
- Do I have to delete them
- are those ignored, since the Radius protocol is enabled
- or else
