File server access logging

We nead to move a lot of cooperating folders between some file servers.
As Windows-users access these folders through DFS, there's not a problem for
those users.
The problem is that we also have a lot of legacy clients (Mac, unix/linux
etc) which cannot use DFS, and therefore access some of the file shares
directly. Due to lack of documentation, I search for a solution to identify
this kind of access. Is it possibly to do this by enable some kind of
logging on the file server (Win2k3 SP2)?

/Henrik
