What is the best way to share out an ext2 partition if the previous NFS was
hacked to allow access to my system?

NFS doesn't need hacking to allow access! That's what it does.
Please rephrase the question - nfs is fine as a medium.

Are you saying that you haven't replaced your nfs server and daemons
after someone trojanned nfsd or mountd or rstatd? Then get to it!
And fix the rest of your system, removing the backdoors left in it.
If you can't do that you will have to reinstall (with the upgraded
stuff).
