This is an overview, you'll have to dig out the relevant documentation
for the packages of your choice.
Set up a suitable imap server (there are several available, UW, Courier,
Dovecot and Cyrus spring to mind) and make sure you can talk to it from
your client. If the client you currently use understands both pop3 and
imap then all you need to do is set up a new imap account on the client
and copy all the messages across from the pop3 account. That's the
migration sorted, surprisingly easy. As a precaution, if you have access
to your pop3 mail file/directories, make a copy of them before you start
so if something does go spectacularly wrong, you can replace the archive.
Set up sendmail or postfix to handle delivering mail to the imap server
and then it'll handle direct incoming smtp mail. To collect from a pop3
server, investigate fetchmail, which can collect mail from various
accuonts and deliver it to your local sendmail/postfix/whatever which
will then pass the mail the imap server.
