The best option is number 1, since it will be the easiest. Just get a wired
router, connect both AP's to them, and turn use them JUST as AP's. not
routers, dhcp server, etc. Then use the WIRED router for your configuration
needs, such as DHCP, WAN, etc. That way you can switch between them if you
need to. Let me know what you think.
