I don't even bother with trying to redirect the my documents folder. On the
server I have created a "Users" folder under which I have created a folder
for each user, named the same as their username. Grant only the user the
folder is named after full control of the folder. Use a login script to map
the drive to the server each time they log in, or manually map the drive
when the user is logged in. Then train the users to save to their "home"
folder on the server.
Remember to emphasize that if it is not saved in their home folder it will
not get backed up and you are not responsible for retrieving files not saved
on the server.
