Tom,
You can change the name of the domain. This can be easy or complex depending
on size and what services you have running. However there is no need for the
internal AD domain and the external Mail domain to match up. It's not
necessary and it's not even really relevant. For example many people use
domain.net for internal resolution, and domain.com for external. Or
lan.domain.com for internal and domain.com for external. The external DNS
and the internal DNS should never be the same, so it does not really matter
whether the zones have the same name or not. @domain.com is just a way for
the internet to route mail to the mail server using the public MX record.
When you set up Exchange you will just tell it the name of the external
domain being used for mail.
