Does anyone know of a guide /and or examples of configuring Vendor Classes
in DHCP?

I already read through these articles before posting.

I am unsure of how I can define a new Vendor Class and what kind of
information I need to specify in hex.
(Right Click DHCP Server --> Define Vendor Classes --> Add New Class.)

The quick answers:

They can be defined in either the Snap-in or via netsh commands.

The information that gets specified in Hex is the data that the client will
pass (in option 60) to identify itself as a member of that class.

See RFC 2132 for more information on options...
