We are seeing icon in our DHCP Server that appear as paint brushed, which
means the records are waiting to be updated in DNS. DNS is set up to
dynamically update and it is with non-DHCP clients. I tried restart DHCP,
the server but the icons remain. Can someone please tell me how to force
those records to update in DNS?

If they are non-DHCP clients , you can record the DNS records in the DNS or
am I not seeing the problem here?
Why would you use DHCP auto DNS update if you are not using DHCP.

We are using DHCP and I understand that clients will auto update DNS. My
question is the icon that appears as a paint brush and according to the below
article, updates are pending:

Active lease, DNS dynamic update pending. This address is not available for
lease by the DHCP server.

First check your settings: http://www.ad.uiuc.edu/ddns.htm

And then tell me yours :P
