I recently had over 1200 files deleted from a server, I had my auditing set
for "delete failures" and "success" along with a couple of other logged
parameter. The problem is by the time these files were noticed missing my log
files had over wrote the supposed time period that this event took place.
Is there any place to look, server or workstation, that might shed some
light on who could have deleted these files?

I'm afraid you're out of luck.
