I am a newbie at this. I am attempting to setup my own Web/Exchange
Server using Win 2000 Server. I will be using it primarily to run two
websites and exchange 2000 with maybe 5 user accounts. As a test I
followed the step-by-step guide here:

For what I plan to use it for hopefully giving you enough detail,
should I follow the guide from the site above or is it always best to
use the DCPROMO method?

It doesn't matter. Configure your server will run dcpromo. Its not a good
idea to run public website or exhange on a domain controller, though.

By default, a 2000 domain controller leaves very well known ports open for encryption, key interfaces, and replication and other. If there was an external interface on this box, all those ports would be exposed, even if their protocols are not routable

A DC needs very little CPU power especially for 5 users, I would recommend taking a bare bones system and using your primary machine for the exchange and IIS, also iis should be on a separate box
