what channels have the least overlap for 2 access points that will be in
close proximity to minimize interference.

Dave. According to Microsoft, an 802.11G wireless access point has 3 channels
that do not overlap at all. They are channels 1, 6 and 11. All of the others
overlap a portion of the bandwidth of the channel.
