Change the SSID on the router. Most routers are configured by entering
the router's IP address on the addressbar of a browser. Refer to the
router manual. If you don't have the router manual, go to the router
mftr.'s website where you will find the manual and/or instructions.

Once you have changed the SSID (and set up encryption), your wireless
adapter will find the connection so you can connect to it.

If you have disabled SSID on the router (not a useful thing to do for
security - see link below), then why were you surprised that your
adapter had that function greyed out?!

SSID has nothing to do with the encryption key.

I have seen a number of articles that indicate that
turning off the SSID broadcast does nothing much
for you security wise and is a potential problem from
the standpoint that anyone else looking for a clear
channel to set their network up on does not see you
so they land there stomping on your network. If
you google for "disable ssid" there are a number of
articles explaining why that is not quite as good an
idea as it sounds.
