Is there a de facto standard way of providing centralized authentication
in a Linux environment analogous to Windows domain accounts? I know
that Linux can use Samba to participate in a Windows domain, or even be
a domain server, but is there a more native mechanism typically used
when Windows is not involved at all?

An LDAP server could be used for this.

NIS, LDAP, Kerberos, RADIUS.
Windows Active Directory is just LDAP + Kerberos, anyway, with (I think)
an option for RADIUS.
I'd go with LDAP, myself.

I must say that I've had loads of fun with LDAP, as more and more
programs are using it as a backend for user accounts. I think it's a
good way to go!

No, Windows can *provide* RADIUS via IAS, the Internet Authentication
Service.
RADIUS has nothing to do with Active Directory, which consists of 3
RFC-compliant parts: LDAP, Kerberos V, and DNS.
