Are there some easy-to-follow instructions on how to build Ethereal for
Linux?

I found a set of ancient RPMs in Ethereal's web site, next to a note
that says: "Do NOT use these RPMs".

Download the open-source code from http://www.ethereal.com/ and read the
README and INSTALL files.

Are you sure you're looking in the right place? On the ethereal site,
there's many different versions available. It's also included with some
Linux distros.
