Baxk-up SMTP (MX 2x, 3x, ect)

I'm considering a back up MX server for my compansy e-mail we currently are
using KERIO mail which is fine for us, but I would like to have something
catch our e-mails if the primary server is down. I was going to build a
Linux system, with a simple SMTP server to catch all mail sent, then have
KERIO poll every 10-30 mins or something. After thinking about it, I
remember that IIS has an SMTP server, Could I set up (and if so how) MS SMTP
to blindly accpet all mail directed to it (and not allow out bound), holdng
the mail till it's fingered by my MX 10 server?
