Audit Specific User

What I really want to do is audit a specific users access of certain folders
on a server.

Is there a way to configure it so just that users activity is present - and
not just filter by sorting in the columns of the event viewer?

Or -- I would like to audit a group.

My objective is to minimize the impact auditing has on the system and
mimimize the amount of data collected.

Thanks!
