Access to resources and VPN

What I'm interested in is actually how to make sure that users who
connect to the server via VPN do not get access to any resources other
than their mailboxes?

It is not easy. This is what we do. We have some consultants who need access
one of our server. We setup rule in our Cisco PIX to limit them to the
server only.

If your VPN users need to access the email only, you may want to setup OWA
or RPC over HTTPS.

They have access to OWA but it doesn't give them the whole
Outlook functionality. I red something about Outlook over HTTP
but it apparently doesn't always work.I thought it can be somehow
done using Group Policies and all users who connect through VPN
some special kind of membership with limited user rights but not
quite sure how as they still need to be Authenticated Users to VPN.
